Character

This tea is perfect for both Mizudashi (cold brew) and Koridashi (ice brew), bringing out a smooth, refreshing sweetness and a gentle aroma — just right for slow summer days.

This fragrant deep-steamed sencha is made from Saemidori, first flush tea leaves picked in the spring of 2025. The leaves are cultivated in the volcanic, mineral-rich soils and misty mountains of Kirishima, in southern Japan. The pristine environment shapes the tea’s unmistakably refined character. This farm recieved the Minister of Agriculture, Forestry and Fisheries Award 2024. 

The fukamushi (deep-steamed) process enhances its umami, resulting in a rich and mellow cup with a beautifully balanced finish.

 

 Cold Brew Sencha

Mizudashi cold brew - sweet and refreshing

Recipe

Tea leaves 6-8g (about 3-4 tsp)

Water 750ml ( 25 oz )

Brew time: At least 2 hours in the fridge, ideally overnight

Brewing

・Put 6-8g of sencha tea leaves into a glass brewing bottle or large mason jar.

・Pour in 750ml of cool water

・Let it brew in the fridge for at least 2 hours, ideally overnight

・If you'd like to drink it faster, swirl or shake the bottle periodically to speed things up

・Pour into a wine glass for an elegant and refleshing ship!

・You can add fresh water to make another brew, but please discard the tea leaves within 3-4 days
